Mexi-Rice Skillet

 Pantry meal perfection! You likely have all the ingredients for this easy and delicious one-pan meal that is perfect for busy nights.
Ingredients:
- 1 red onion, diced
 - 1 Tbsp. olive oil
 - 1 packet taco seasoning
 - 1 red pepper, diced
 - 1 (4 oz.) can diced green chilies, drained
 - 1 can corn, drained
 - 1 can black beans, rinsed and drained
 - 1 can diced tomatoes with green chilies, drained
 - 1½ cooked rice (brown or white)
 - ½ cup shredded Monterey Jack cheese
 - ¼ cup shredded cheddar cheese
 
Directions:
- Cook onion over medium heat in olive oil. Once onions soften, add packet of taco seasoning and combine.
 - Add diced red pepper and green chilies and cook for 2-3 minutes. Add drained and rinsed beans, corn, tomatoes, and rice.
 - While mixture warms, turn oven on broil. Once temperature is reached, top mixture with chesses and place in oven for 3-4 minutes to melt.
 - Serve immediately with diced green onions, cilantro, and other desired toppings
